Bitters Some herbs are called bitters because of their taste. This family of herbs act as stimulants for the digestive system. These herbs can strengthen your appetite, help you digest a meal, or calm your stomach (and clear your head) after a night of overindulgence. Here is a list of the herbs known as bitters.CentauryBarberryGentianGoldensealHopsRueWormwoodTansyHorehoundYarrowChamomile- Carla Joy

Mustard greens are the only one I can think of. There may be some Asian greens

that are bitter. Locally in the spring there are dandelion greens you can

gather from untreated lawns and pastures. I munch on sheep sorrel too that

grows all over here. Fiddlehead ferns are bitter to me even though they say if

you soak them enough they aren't bitter.Bitter herbs seem to come out in the

early spring, the time when we're supposed to use them to cleanse. Check the

label out on a bottle of Swedish bitters at the store for more bitter herbs.
