I like to sautee the neck and liver in butter then add to stock... or

snack on while cooking. :)

I threw the neck in already. I just dont'know what to do with the

gizzard, heart, and liver. I want to maximize the nutritional value

from them so I don't know if that means eating them separately or just

boiling them along with the rest

I think of the liver as the cook's bonus and saute and eat it. I

put the gizzard and heart in with the bones, but that may not be the

best way to get the most nutrition out of them. Given that I did

not actually kill the chicken and don't know if those are even the

heart and gizzard that belong to this particular chicken, nor what

happened to them in the process of being put back in, I think I'd go

with the long slow cooking. (of course, this is all true of the

liver as well and I'm not going to put that in the stock!!)

For some reason my last chicken broth came out really dark. I put

it in ice cube trays and when I took some out after freezing it, it

was almost brownish. I ate it anyway, of course, after all that

work. I was just wondering if anyone else had this experience.

Mine is generally a dark, rich brown. I prefer it that way, actually.
