I put the gizzard and heart in with the bones, but that may not be the best way to get the most nutrition out of them. Given that I did not actually kill the chicken and don't know if those are even the heart and gizzard that belong to this particular chicken, nor what happened to them in the process of being put back in, I think I'd go with the long slow cooking. (of course, this is all true of the liver as well and I'm not going to put that in the stock!!) I put it in ice cube trays and when I took some out after freezing it, it was almost brownish. I ate it anyway, of course, after all that work.
