So far, the salads are going to have lettuce, blue cheese (I am having a CRAVING), baby onions and boiled eggs. I know...not much... So here's my dilema. I need to make a salad dressing. I have available: olive oil, coconut oil, apple cider vinegar, white vinegar, lemon juice/lemons, garlic....and blue cheese....oh, yogurt and raw milk. Please.....send me a recipe to make. Do you have eggs, Dijon mustard and dry thyme? Salad for 2? If so, whisk 1 raw egg yolk in a mixing bowl, add in a little squirt of Dijon mustard, a pinch of thyme, salt and freshly ground pepper, press in a small clove of garlic, then pour in gradually about 1/4 cup of olive oil, then 2 tablespoons of white wine vinegar. For a sweeter taste, include a teaspoon of honey. For a Caesar dressing add an anchovy fillet and some grated Parmesan. Taste and adjust according to your tastes. In the middle east they dress salad with lemon juice, olive oil, salt & pepper, but I don't know how that would go with bleu cheese!
