Hi ,

All you need is the

raw milk. Cheddar does not get heated to high heat during the cheese making

process. The highest the temp. goes is 102°f.(39°c.) So if you are using raw

milk and you use any cheddar recipe you would have raw cheddar. I use the

book " The Cheesmaker's Manual " by Margaret and " Home Cheese Making "

by Ricki Carroll. Both have excellent recipes for cheese. Hope this helps,
