Guest guest Posted January 4, 2006 Report Share Posted January 4, 2006 Plain boiled buckwheat groats are only a few points higher on the glycemic scale than boiled steel-cut oats and are listed as one of the top 100 low-glycemic foods in one of the three hundred gimmicky spinoff books. Add butter and a side of eggs/bacon and the load drops further. If one doesn't believe carbs are the devil, this would be a decent choice, especially because the mineral content can be higher than other grains. Anecdotally, I altered some whole-wheat breakfast recipes with combinations of oat and buckwheat flours, and it seems to make a real difference in their staying power. The traditional Polish diet is heavy on the buckwheat... my husband is Polish... and diabetic... and doesn't want to give up makin' waffles with the shortie...
