My daughter is in 6th grade, and is doing a science project like other kids her age around the country. And she is doing her project on cheese, which I think is great. She decided on ricotta, since it is such a simple cheese, and the purpose is to decided which makes the best curd, lemon juice, lime juice, or vinegar, which is not a problem. Here is where the problem comes in. She needs photos, of the milk heating in a double boiler, of the coagulants being added and stirred, the set curd in the double boiler, the curd draining, and the curd in a bowl ready to eat. And we are just now starting to freshen goats! So I don't have any milk right now to do this with. She has made many batches of ricotta with me, so has all the data she needs.
