Hi All!

I haven't posted in a long time, but here goes. Does anyones else's Kefir

develope a slightly fuzzy cream colored layer over the top after 2 days of

fermentation? What is that stuff? This is raw milk kefir.

Thanks!

I get that sometimes, especially when I shake the jar hard (after

taking out the grains) and let it sit out for a while to get up to

room temp (because drinking cold milk/kefir is a crime against gourmet

living)... The only word I know for it is " yes!!!!!!!! "

fuzzy and creamy--what more can anyone ask for?!?!?!?!?!?!

It must just have something to do with density/air/fluffiness and

normal separation of various layers...
