Kombucha Containers - Nothing big enough!

I just got my first SCOBY today and I am eager to start.

However, I can't seem to find a container big enough for the 3 quarts!

Can I make a smaller batch?

If not, Can I leave my SCOBY in its 1 cup of tea until I get a container?

I'm really bad at not making tea when I finish the last batch so it

sits in the fridge for a while. The guy at kombucha2000 told me I

can still use it as long as it has not turned dark. As a matter of

fact I have had one sitting in the fridge for a month now. I keep

meaning to get to it but with the holidays and all...

Whoops! *runs to put the SCOBY in the fridge*

Dark... like the whole thing? I've never seen a scoby before, mine is

white but it has these slightly darker vein-like things in it. Is

that normal?
