You should never wash them with soap (because it ruins the oil barrier) - just rinse with water and wipe clean. That will protect you from the iron. Make the baked beans recipe in NT (pg. 497) if you're looking to get a good amount of iron into your diet. It has legumes and molasses in it. -Lana > Are cast iron pans inorganic and also unhealthy?
