I hardly every peel mine. I get organic and just scrub them well.

I read yesterday in NT, as I was making carrots for my infant, that you

shouldn't be afraid to peel carrots as the nutrients are more evenly

distributed then in other vegetables.

Yeah, I keep noticing that and I think it's silly, especially when

making stock! What a waste of time. It's probably something she learned

when she studied French cooking that subtley (and arguably) improves the

taste or texture.
