Guest guest
I get organic dessicated coconut from my local coop. Its only 1.99 a pound and I can order it in bulk for only $1.60 a pound (10 pounds). I have been eating a good amount of it in various things lately, mainly porridge, and know it contains a good amount of nutrients (http://www.nutritiondata.com/facts-B00001-01c20o7.html), and was wondering if coconut has any anti-nutrients in it. I was thinking since it is a nut it might have a good amount of phytic acid and enzyme inhibitors, but never recall reading anything like that in NT. Does anyone know? -
Guest guest
It seems as though the phytic acids should be in the inedible hard-as-a- rock outer shell of the coconut. As far as I know, the only antinutrient in a coconut is its shell. -
