I noticed this Nov that the cheese is a lovely shade of yellow and my thinking is that it would be because of spring grass feeding. It's not organic, and I've heard on one of the lists that Landmark is *almost* not raw cheese, since they supposedly heat the milk higher than raw cheese usually is heated. I'm not stressing over that though - I love the taste and smooth texture - and it doesn't affect me (mucous) like pasteurized cheeses do.
