Guest guest Posted January 12, 2006 Report Share Posted January 12, 2006 I notice that all the recipes that use carrots in Nourishing Traditions say specifically to peel them. I thought much of the nutrients were in the peels of vegetables and in the past had usually not peeled my carrots. Does anyone know why peeling would be preferred?
