They focus on preparing foods for max nourishment, including pre-industrial food prep, like soaking and sprouting grains, although this particular group mostly avoids grains, culturing foods by lactofermentation, etc etc. It's basically healthy natural eating, good fats, fresh veggies, aimed at high nutrient content, high enzyme content, and high probiotic content. It can be done w/out violating the diet, too, and I've loved some of the foods I've learned to cook, and I've barely scraped the surface. There's nothing really tooty-fruity about it either. It's actually the way fellows in their 90s still talk about how they ate growing up, and I've heard these teachings all my life from my grandfather and a few other 'ancients'. It's how someone on a farm would probably still eat. For anyone 'obsessed' with nutrition and frustrated that we can't give our kids " healthfood store " foods, whole grains, dairy, etc, and feels like there is nothing healthy to feed them, this is a great area to explore. I have so much diet-related anxiety, and this is the first time I've felt like I had a good guide that could be applied to me and my family.
