Sterling Cheese Co-op. The co. has been around since 1976. I was thinking of trying to order it directly from the company and freezing it. I use it for pizza mainly, so it should freeze and thaw fine. I intend to try it on lasagna soon. it really had a nice texture--just like mozarella, but it was called a mild cheddar style cheese. pretty expensive, but well worth it. It's imported from Canada by ANCO Fine Cheese which is in NJ. If they're shipping from New Jersey down to Texas, I figure it's probably available other places too. They also make goat mozzerella, though it can be harder to find. It's at my local Whole Foods though. Whether at Whole Foods or our local chain (HEB), I find it in the deli section where the specialty cheeses are. And yes, it makes WONDERFUL lasagna. Ie use garlic herb chevre (very easy to find as this is what people usually think of when you say goat cheese) as the filling and the goat mozzerella or cheddar for the top. Pricey, but nice for a special treat. To save money, I just do two layers of chevre and just one layer of shredded cheddar on top. April Barb do you have a bread machine? Guest guest Posted May 29, 2006 Report Share Posted May 29, 2006 Hi Barb, I just use regular noodles for lasagna. I figure they're gonna be as processed as white bread is. Is there something better to use? And for the pizza crust, this is enough to feed my family (and my husband and son eat a lot) 3 cups flour 1 tbsp sugar 2 1/2 tsp yeast (or 1 pkg) 1 tsp salt 2 tbsp olive oil (or canolla or whatever) 1 cup water That's it. With a bread machine, you just dump in all the ingredients in no special order and set it on the dough setting. When the dough is ready, you can roll it out right on the greased cookie sheet. Precook the crust at 400 degrees for 5-8 minutes before adding toppings. It may take some experimentation to get the crust as crispy or soft as your family likes it. For a chewy crust (this is what my husband likes) you can roll out personal size pizza crusts on the counter then cook it on a griddle or skillet to brown both sides. Then add toppings and put in the oven. My son just loves having a whole pizza for himself, and he can put on the toppings himself. Making pizza isn't just about dinner in my house, it's like a whole family event. Very fun.
