My son is on the specific Carbohydrate Diet, but we're always looking

for ways to get meat into him as well. Meatloaf has always been a

favorite and lately, we've been doing pizza with a ground beef crust.

I just take 1/2 lb. of ground beef, mix it with about 1/4 c. pizza

sauce. I press it into a pie pan, bake at 350 for about 15 minutes.

Then I drain off the fat, add sauce, cheese and cook until cheese is

melted. My kids both love it...I don't mind it either. It's like a

italian meatloaf in disguise :)

At the beginning of SCD, our food choices were really limited. I was

making " pancakes " with egg, shredded chicken, and 1/2 banana mashed.

Sounds gross, but he ate tons of it.
