Tomorrow I am going to try Stan's nut muffin recipe. I am curious what other favorites there are with other SCD picky eaters?? You can find recipes on the pecanbread group, but all I do is take about a cup and a half of cooked butternut squash. add 2 eggs, about 1/4 tsp. of cinnamon, 2 eggs, and about a Tbsp. of butter. I put it in mini-muffin tin lined with paper cups. bake at 350 for about 25-30 minutes. you can use coconut oil instead of butter. He's getting a little tired of them now and we're moving on to bigger and better things...he's loving the pizza made with ground beef crust, homemade pizza sauce, topped with Monterrey jack cheese. there's a recipe for that at the scdrecipes website. I cut the meat down to 1/2 pound. i was even able to sneak pureed broccoli into the crust yesterday! about the chicken pancakes...my son didn't like them much until I added 1/2 mashed banana to it. not good for yeast, but we're not fighting that battle quite yet. i decided to build up his SCD food choices before I begin to remove yeast feeders. that way, he'll have more options. I've also been using Stan's juice of apple, pear and spinach. My kid LOVES this. and I drink it too...quite good. We give it to him in a fun Buzz Lightyear cup that he got for christmas and make it feel like a treat. He drinks it every morning. and sometimes at lunch/dinner. I just want to add that before we started this diet, my son was extremely picky as well. he had his foods that he would eat and that was it. Guest guest Posted March 1, 2008 Report Share Posted March 1, 2008 boneless, skinless chicken breast cooked in ghee with mushrooms, garlic and onion powder (homemade) and salt fish with oil, garlic, salt pork roast with garlic and salt in crock pot cooked puree acorn squash with cinnamon and ginger (powdered) cooked purreed butternut squash banana, black walnut butter (HM), cinnamon and allspice baked pancakes (use gelatin water egg substitute) banana, pineapple, coconut oil, SCD yogurt, pineapple juice smoothie (can do it without yogurt) frozen blueberries he loves the pumpkin pie (crustless) from BTVC book but can't tolerate eggs now eggless, honeyless, pecan butter muffins Bonita Those of you doing SCD - what is your child's favorite food? Guest guest Posted March 1, 2008 Report Share Posted March 1, 2008 Not 100% SCD but my kids like: - very ripe pears - veggie burgers made w/beef or bison, pureed squash, egg (if tolerated), sea salt and a little olive oil, baked or fried - boiled chicken thighs w/sea salt - Applegate Farms turkey hot dogs - squash "pie", similar to the buttons below only I make it in a glass pyrex dish and cut it up in squares, my son likes it a lot but does tire of it after a few days so I make it then give it a rest for about a week and then make it again - iceburg lettuce - chicken salad made w/cooked ground up chicken, pureed veggies and sea salt - raw celery sticks, unfortunately my son can't digest them but he does love them. maybe someday. We don't do a lot of the fancy recipes - my son prefers the simple stuff. I haven't tried spaghetti squash yet but it's on my list. Guest guest Posted March 1, 2008 Report Share Posted March 1, 2008 Well we have had favourites in phases. In the beginning, everything was in popsicle form. Then we had lots of food on party sticks. Now we eat most foods as is (hamburgers with vegetable puree, roasts, garlic chicken and vegetable soup, cooked vegetables, fruit salad). Morning favourite is chicken pancakes with vegetable puree. For lunch we have veggie and meat, egg wraps...my kids love them. I make a crepe from beaten eggs and use it to wrap vegetables and meat. We put ketchup and mayo on it and it is so good. For desert we have blueberry jam. I boil honey and blueberries, add apple/pear sauce and melted coconut oil. It is very tastey too. On other days we will have banana pudding made from banana and honey cooked together with coconut oil added in. The coconut and banana taste delicious together. (we can not do any casein or nuts...)
