, assuming you have a Trader Joe's nearby, they have a lovely

gouda-like sheep's milk cheese called " Shepherd's Basque " . It's mild

and delicious. We use it for everything that calls for mozzarella or

cheddar cheese -- pizza, grilled cheese sandwiches, even mac and cheese!
