Products like corn chips may have flour in them to keep them separated.. Wheat and wheat products are often used as thickeners, stabilizers, adn texture enhancers in food. Gluten free does not always mean gluten free.As much as 20% of gluten free products actually have some gluten in them. Even oats are controversial. some confusion about gluten-free diets Some diets I read that are gluten free contain corn and some do not..what's the scoop??
