Guest guest Posted September 9, 2004 Report Share Posted September 9, 2004 > Garlic Soup~ > > 1 TBSP. of olive oil > 12 cloves of garlic, peeled and thinly sliced > 2 large, sweet onions, peeled and thinly sliced. {I use Vidalia} > 1 tsp. of fresh Thyme, chopped > 2 cups of chicken broth or vegetable bouillon > 1 pinch of Cayenne pepper or more to taste > 1 TBSP. fresh Basil, chopped > Salt > > Add first 3 ingredients to a 8 qt. saucepan and saute. Turn down > heat, cover and simmer for 25 minutes {until garlic and onion are > translucent}. Transfer to a blender or food processor and puree > with the Thyme and 1/2 broth. Pour puree back into pot and add > remaining broth, simmering for 20 minutes. Add Cayenne, Basil and > salt to taste and heat for 2 more minutes.
