> Ingredients:

> 2 ½ C. vegetable broth or chicken broth

> 1 C garlic, cloves peeled

> 1 C. chopped peeled potato

> 1 C. chopped peeled carrot

> salt and pepper

> Sprig or pinch of thyme

> Directions:

> 1. Place all the broth, vegetables and garlic in a medium pan.

> 2. Bring to a boil.

> 3. Cover and reduce heat to a low simmer, cooking for about 25 minutes.

> 4. Puree the soup in batches in a blender.

> 5. Return soup to pot to reheat on medium heat.

> 6. Season with salt and pepper.

> 7. Serve with crusty toasted bread which has been rubbed on both sides

> with a raw clove of garlic.
