Hi -

You've been reading about Weston Price or Sally

Fallon, huh? Excellent stuff!

Unfortunately, our kids aren't likely in the position

to tolerate these foods in whole grain form yet.

However, I agree it's the best way to eat. I don't

have my boys GF or anything, but I'm not able to bring

myself to try any sprouted grain breads. I tried some

for myself and DID react. Once the reactions are in

place, no matter how we prepare our foods, it's still

going to be an issue. But possibly getting the GI

healthier, allowing enough time to pass (years 3+) for

allergies to reduce, establish healthy flora, and calm

the immune system, hopefully have a better

medicine/agent available, and perhaps in the future

you could try foods that couldn't be tolerated now.

In the meantime, the highly processed bread - useless

as nutrition but accepted on the diet - is

tolerable simply because it's so processed that not

much harm comes from it anyway. We still avoid it

except 'special occasions' or no other options at the

time.

There's a list (if you haven't already joined) called

GFCFNN, a GFCF group following the Nourishing

Tradition's method or WFP. I'm on it and I take what

works for me from it. Very devoted people there, but

they haven't been able to consume dairy or wheat

despite these forms. It was them that helped me

understand that trying these foods would not be

helpful to my boys (or myself) ... however, they

utilize many other WFP style foods and you can still

design an NT type healthy diet and still follow the

diet as well.

I do believe the enzyme issue has a lot of importance

as to why grain allergies are so much more significant

today. But in the meantime, reducing reactions in the

gut is far more important than trying to load them up

on nutrition that they can't absorb anyway. Lots of

other ways to feed our kids are available, but

ultimately the primary goal must still remain low

allergy.

I have been researching the Body Ecology Diet and the Specific

Carbohydrate Diet. I think a diet in veggies and meats is very

important for our kids and at least I think Dr G would agree with

that. I am making coconut kefir which is rich in good bacteria. I also

will attempt some fermented foods.

Hi there

We use Young Green Coconut water..sometimes termed juice. We use

some kefir and have it ferment for about 24 hours and then add some

in to pomegrante juice and water. I think there are MANY benefits to

coconuts and frankly many Americans can benefit from coconuts in

their diet.
