Cheryl, this is so funny, as I was going to post about this very book

today...many of the recipes do have to be modified for our kids,

but it's certainly do-able. So far the " hits " have been the chicken

nuggets with cauliflower (they came out better when I baked them than

when I pan-fried them), the pancakes with sweet potatoes, and the

french toast with the pumpkin. I tried to make the coffee cake with

the sweet potatoes, but it came out too gooey. That could have

something to do with the fact that we live at an altitude of 3000 feet

and the baking time might need to be altered, so I'll have to try it

again. And I definitely want to try the brownies with the beets and

the spinach.

I tried the pudding, but it wasn't a hit with my son or with me: we

could still taste the avocado. I wonder if I did something wrong in

making it? Anyway, it did made a really nice topping for non-dairy

ice cream (the cold ice cream hid the avocado taste), so it wasn't a

total loss. The chocolate dip with avocado and carrot looks

interesting. Great for dipping apples and other fruit!

There's a similar book out, with similar recipes, called " The Sneaky

Chef " , which some moms prefer to " Deceptively Delicious " . And of

course, a plagarism suit is in the works. :)

Question with regards to some of the ingredients: What is Dr. G's

position on coconut? On flax seed meal?

An FYI: Dr. G doesn't allow any kind of nuts, including hazelnuts.

You're probably right, the avocados were probably too ripe. They were

left over from some guacamole that I made a week prior.

Forgot to add that Splenda and Splenda Sugar Blend can be substituted

for the sugar in all the recipes. I couldn't find Splenda Blend in

brown, so I just mixed 1 part brown sugar with 1 part Splenda, and

then you measure the same as regular sugar.
