Guest guest Posted January 28, 2008 Report Share Posted January 28, 2008 Seriously, I can't tell you how much I love this book. I'm so glad to finally get veggies into my son! I made the pancake recipe and it didn't work for me. Like your coffee cake, it came out too gooey so I added an egg and 2/3 cup of flour and now it comes out just like a regular pancake and Gryffin gobbles them up. I also add some dairy free and sugar free chocolate chips to it since he loves cc pancakes. I haven't tried the nuggets yet but they are next on the list. We *loved* the pudding! I had one of our therapists taste the pudding and she had *not clue* that it was avocado. Gryffin wasn't a huge fan because he really doesn't like it warm - too new of an idea for him but I did learn some great things about it - if you refrigerate it, it'll make a great icing for cakes and donuts! I made it and froze it in little portions in an ice cube tray and now I use it to ice the donuts (from the book, too) and send it as a part of his lunch. I've definitely figured out several ways I can modify the pudding. I was thinking I could crush up hazelnuts and make my own " nutella " spread, etc. Lots of great stuff. Maybe the avocados were overripe? That would be my only guess because we couldn't taste avocado *at all* and my dh is not a fan of avocados - he loved it. I'm actually planning on buying The Sneaky Chef next although I've heard the recipes are similar. Honestly, I don't know how Dr. G feels about coconut or flaxseed meal so I changed the subject line to get Mrs. G's attention and hopefully she can let us know. She's pretty much the go to gal for diet questions.
