I found this in the recipe files on dadamo.com. I haven't tried it yet. I

wonder if buckwheat or brown rice flour will do just as well?

Spelt Pizza Crust

1 1/4 cups warm water

1 packet quick rising yeast (2tsp)

2 Tbsp. honey

2 Tbsp. molasses

1/2 tsp salt

5 cups spelt (sub. buckwheat?) flour

Dissolve yeast in warm water that has the honey and molasses mixed in it.

Add flour and salt. Mix well and knead for about 5 minutes. Shape as desired

(pizza crust, dinner rolls, sweet rolls, breadsticks, etc) Cover with clean

cloth and let rise for about 30 minutes. Bake at 350* for about 30 minutes.

Cooking time will vary depending on size and shape of your loaf. FOR PIZZA:

remove from oven after 20 minutes, quickly add sauce, cheese, toppings and

return to oven for additional 10 minutes.

The ezekiel tortillas from Trader Joe's are very good and do not fall apart.

They are sprouted wheat which is ok.

You should be able to find plum tomatoes in your local grocery

store. Plum tomatoes are bred specifically for sauces and pastes.

Yes, you can freeze your crust. I usually premake the whole pizza

and freeze them. Put them directly in the toaster oven for 20

minutes and your good.

CF and made with several flours, including rice flour. I make a big

batch and freeze his " personal pan pizzas " on a regular basis. This is a

really easy recipe that doesn't take long and they are my son's most

requested menu item. His meal is ready - from the freezer to the table -

in about 10 minutes!

Instead I buy the Heinz Organic ketchup - nothing but good stuff in it.

We use either goat cheddar or goat mozzerella. Even if your kids don't like the

goaty taste of those cheeses, when they are melted on a pizza the goaty taste

gets overpowered by the tomato sauce. My son and I won't eat just the cheese,

but we love the pizza!

Goat cheese has no gluten and works well. You may also want to try

natti brand Almond cheese. It tastes just like " regular " cheese but

has a bit of gluten. *I'm sending you my recipe - try both cheeses and

see what you like the best!

We love Manchego (sheeps milk cheese) from Sam¹s or Meijer. It is very much

like mozzarella in flavor. If I didn¹t know better I¹d swear it was ³cow¹s

milk² cheese. It melts and behaves just like you¹d want it to for pizza.

Mmmmmm, manchego, mmmmmm....! (In my best Homer Simpson impression)

I love a good manchego! I'm a big cheese fan so I always have to

stay away from the cheese monger in whole foods or I spend too much

money.

It¹s delicious, isn¹t it? If it weren¹t so expensive I¹d probably be

overindulging on it in a terrible way. I could eat the whole wedge!

There are days when dh and I just decide to have a cheese plate for

lunch (or dinner....or breakfast) and we head out to WF and spend

about $75 on cheese, some fruit, some good deli meat and bread. We

don't have many of those days anymore since finances are so tight but

when we do, it's a party for two! :)

My husband and I do the same, but we go to Trader Joe's for a fraction of

the $$$!

I know it makes more financial sense to go to TJ's but they don't

carry D'Afinois brie! I can't live without D'Afinois on my cheese

plate.... Maybe I should just start picking up the rest at TJ's. I

smell a cheese platter in my future...

I'd like the pizza crust recipe.  I've been trying to email you but you

must have a different email system so it won't go through.  Could you email me

the recipe.  I used to make pizzas with my son every Friday and I'd love to

resume that with a wheat-free crust.

*Yes - all mammal milk has casein. My post below is a bit confusing

after an all nighter working on my next book. Sorry about that! It is a

real job, to say the least, trying to determine what is and what isn't

" safe " for our special children. My son can tolerate small amounts of

casein but no gluten, therefore I think I tend to be more concerned with

gluten.

Goat cheese does have casein, but there are two different kinds of casein.

There's alpha and beta casein. One of them is predominant in cow milk and the

other in goat milk. I can't remember which is which, but I do remember that the

casein in goat's milk is much much easier to digest and people that react to the

casein in cow's milk often don't have a problem with goat milk. I believe there

may be trace amounts of the cow milk casein in goat milk so if you've got a

child really sensitive to the casein, you might want to investigate further. My

son does just fine on it.

Ya know, I have heard this before, come to think of it. The goat milk casein

is entirely different from bovine casein.

My son does fine with goat's and sheep's milk cheeses, probably because they

are a different protein.

Yup. A lot of kids do better with goat and sheep milk than cow. I

have to also mention that I've started to drink some raw milk and I

*don't* have any problems with it like I do regular milk. I am able

to tolerate it very well.

My daughter has been off of cow milk for years and we tried to

reintroduce it and she had flu like symptoms including being miserable

with diarrhea and vomiting. Her DAN nutritionist recommended that she

try goat yogurt and she has done great with that!! We started out with

very little to see if she would react to it and she hasn't. .I also

have a sensitivity to cow milk and have no problems with goat cheese.
