Guest guest Posted February 21, 2006 Report Share Posted February 21, 2006 Hi Mariella We use Pure oraganic marg which does contain soya, Xylitol instead of sugar and Orgran self raising flour which is gluten and yeast free - available from www.dietaryneeds.co.uk I think this is also corn free but you could always ring up Pippa and check - she is brill! The cake comes out really well and I allow a bit of icing as a birthday treat. Guest guest Posted February 21, 2006 Report Share Posted February 21, 2006 Hi Mariella Look on pecanbread.com - there are nut or rice flours that can make cakes especially if he can have eggs and you can use xylitol to sweeten. Or plamil chocolate in chips inside smaller cakes (havent tried melting it for icing yet). What about almond and rice flour with eggs, choc chips, non soya cooking margarine and xylitol? Icing is a tough one! Fruit spread with apple pectin? With no yeast you need eggs - there is also that guar gum stuff (I think) that you put in gf bread to make it " bouncy " . Tom takes one look at anything manufactured to look like real cake and gives me a pitying look. But I live in hope that not all asd kids are as cynical! ALso look at dietary needs direct web site and see if there's anything there. I've had some yummy stuff from there and they have lots on SCD (specific carbohydrate diet) and gf/cf. You can make it either like a carrot cake with banana (and small chopped organic dates or raisins ) or just plain. You can do icing with organic sugar ground into icing sugar with some lemon and orange. We use coconut connections organic virgin coconut oil instead of margarine. (expensive, but hey, it's only once a year) This has fantastic anti fungal-qualities, resists high temperatures, is full of antioxidants and adds a lovely moistness to the cake (also full of medium chain (I think) triglycerides which have great health benefits. Also have recently done nut free chocolate cake with Plamil's orange flavour carob (we don't give chocolate) and tapioca/ brown rice and potato flour. You can add chopped dried apricots if you like and if orange is okay, make an icing with plamil orange flavour carob mixed with juice from an orange. This was a BIG HIT. Even a friend whose child's diet consists ONLY of toast, yogurt and jaffa cakes loved it. I'd have to right down the recipes - let me know if you need further info.
