We ate at a Mexican restaurant which had a very unusual side dish, which could easily be my main dish. It was fried corn chips, spoonful of refried beans, cheese and a slice of Jalapeno pepper, then broiled until the cheese melts. It was so good we tried to emulate it at home and we think we did it. We used the corn chip, refried beans w/touch of meat, Colby/Jack cheese and sprinkled with dehydrated Jalapeno powder made at home, then broiled until the cheese bubbled. We all agreed it was as good or better than the original. They offered salsa and/or guacamole with these but I liked them plain.
