Guest guest Posted June 24, 2002 Report Share Posted June 24, 2002 Well you are supposed to use equal parts of horseradish, ginger, habanero,garlic, onion. The base is apple cider vinegar. What I do is put each ingredient in the blender seperatly with enough vinegar to cover it and blend until the pieces are small. Horseradish is very hard and will burn your blender if you aren't careful so I cut it or grate it first. Make sure there is enough vinegar in the final jar to cover the herbs by 1/2 to 1 inch of liquid. I try to use all organic, but if I can't find organic I just scrub the roots or pepper really well and wash them with soap. Start on a new moon and drain on a full moon. I usually like to shake mine (everyday) for 3 months. Keep it in a cool spot out of direct sunlight. I only use 10 or so habanero and 10 heads of garlic. You can drain a bit off after 2 weeks and leave the rest to brew for a few months. Be sure to shake the jar atleast once a day. Hopefully that made sense---my 3 year old wants to read a book NOW.
