My kids, over time, got used to not having it. However, we recently tried sheep's milk cheese (and yogurt) and it has been a revelation! So far, my kids have not negatively reacted to it. I don't know if sheep's milk products have been ruled out for your child, but if not, I would recommend giving it a try. I found some great varieties at Whole Foods, mild and melty, very nice. My boys have had grilled cheese for the first time in their lives. I shredded some onto a pizza as well and it was terrific. They have been enjoying it a lot. I, too, would love a good dairy free ranch dressing recipe is anyone has one! Anything to help get more veggies in! I need HELP with SUBSTITUTIONS please!! Ok, wow! I use rice milk with a bit of lemon juice (maybe a TBSP). I whisk in a small amount of garlic powder, a larger amount of onion powder, dried parsley and salt. Then I whisk in mayo. We use a Spectrum canola based mayo and it is soy and dairy free. I usually add approximately double the mayo to the milk mixture but you can play around with the consistency. Goat cheese is usually a good sub and it's a lot easier to find these days. I find it at Trader Joe's and Costco, plus many health food stores. The version I've been buying at Whole Foods does not list casein as an ingredient. I've been told that some people can have the sheep and/or goat milk because those proteins are easier to break down than cow's. My kids were strictly CF before we tried the sheep milk cheese, and I could tell in they had a cow's milk infraction. We have seen no such reactions to the sheep's milk cheese, for what it's worth. I figure that might not be the same outcome for every CF child. I think it can be hard to parse out for each child what the issue is with dairy: celiac-style can't break it down opiate action, actual food allergy, or food sensitivity. The cheese I use most often is: Brigante Sardinian Cheese. Ingredients: Pasteurized sheep's milk, salt and rennet. Very mild tasting. I need HELP with SUBSTITUTIONS please!! Ok, wow! Guest guest Posted April 13, 2010 Report Share Posted April 13, 2010 All mammal milk (including human milk) contains casein, but from what I understand, goat milk has only a slight trace amount of casein and it is different than cow's milk casein. They sell it in a large piece at Sam's club and most other specialty grocery stores like Whole Foods carries it. It melts well and tastes good. I make grilled cheese with it, and have melted it onto bagels. Next treat we'll try: Mac 'n Cheese! I was surprised to find that Whole Foods actually has several types of sheep's milk cheese, so there may be others that are also good. I use it to make mac and cheese as a treat! It is expensive...about 10 dollars a pound. Guest guest Posted April 15, 2010 Report Share Posted April 15, 2010 If you are near a Trader Joe's, they have a great shredded goat cheese that makes a great substitute for mozzarella and melts to look nearly exactly alike. Once a week I make a pizza (white flour dough from Trader Joe's) for my kids (one , one not) and add meat to the pizza sauce (pureed baby food), Then I put half mozzarella and half goat cheese and it comes out beautiful! I asked Dr. G about this and he said no more than 1 x week and make sure there is meat on the pizza. Goat cheddar at Whole Foods is $27/lb, but I boutght the prepackage for a whole lot cheaper. I would like to find it already shredded. I hate to shred and I am not sure if it would shred well in a food preocessor (I have a food processor that I really do not know how to use. I¹ve asked at Sams (whether the {Pecorino is pasteurized or not) and I get shrugged shoulders. A call to an extension agent (LOVE those people) might be enlightening... except that the pecorino may be made overseas... I don¹t know how to find out. I think I¹ll do a little digging soon... I¹ll let you know if I find anything out.
