OK Bill,

I really didn¹t want to bother you, but over the past week or so, the

question keeps popping into my head.... ³How does Bill make those potato

pancakes?²

So to keep me from obsessing over this, would you pretty please share the

recipe?

Shredded fresh potatoes

two eggs

A dash of soy milk

White rice flour if needed to reach the consistency of pancake batter only lumpy

(You can use potato starch instead)

Salt and pepper

I cook them in a pan with 1.8 inch of Smart Balance veggie oil on low to medium

heat. The heat should be set so that it take  5-6 minutes to brown enough to

flip.

The alternative is to mix the ingredients and pour into a small but tall

casserole dish . Place salt pork or bacon on top and  bake at 225 for 4-6 hours

or until a thick crust forms.

You can sever this hot as a Lithuanian dish called Kougel.  Or chill and slice

it in 3/4 inch slices and fry them in oil as breakfast. They come out like a Mc

D  hash brown only better

I too would be so grateful for the recipe. I tried my own version two days

ago and they were a total flop.

Bill, thank you so much! That sounds really good! We will definitely be

giving that a try.

We¹ve been in a recipe rut for a while.

I did make a sour cream substitute today out of soy milk, Dari Free and

vinegar today, though. I was pretty proud of myself.

So do you ever serve these with sugar free syrup or do you stick with the

salt and pepper?
