Guest guest Posted April 17, 2010 Report Share Posted April 17, 2010 Shredded fresh potatoes two eggs A dash of soy milk White rice flour if needed to reach the consistency of pancake batter only lumpy (You can use potato starch instead) Salt and pepper I cook them in a pan with 1.8 inch of Smart Balance veggie oil on low to medium heat. The heat should be set so that it take 5-6 minutes to brown enough to flip. The alternative is to mix the ingredients and pour into a small but tall casserole dish . Place salt pork or bacon on top and bake at 225 for 4-6 hours or until a thick crust forms. You can sever this hot as a Lithuanian dish called Kougel. Or chill and slice it in 3/4 inch slices and fry them in oil as breakfast. Guest guest Posted April 17, 2010 Report Share Posted April 17, 2010 Bill, thank you so much! That sounds really good! We will definitely be giving that a try. We¹ve been in a recipe rut for a while. I did make a sour cream substitute today out of soy milk, Dari Free and vinegar today, though. I was pretty proud of myself.
