When they do have carbs (i.e. bread), he wants it to be as processed as possible because then it is as anti-inflammatory as possible and tends to not trigger (inflame) the immune system. As he will tell you, many of the gluten-free alternatives are very hard for the body to digest and process, yet our kids are often flooded with them with the thought that they are better for them than gluten-free. The bottom line is that many of our kids do best with a very low-carb diet no matter where the carbs come from. Guest guest Posted July 25, 2010 Report Share Posted July 25, 2010 Dear parents,  My family has stayed at LA for whole week for vacation and the second appointment with Dr.G and I just came back last night. I have found two restaurants that carried gluten- free sandwiches and gluten-free fries in Disneyland and my son had enjoyed his foods there very well.  Thank all of you so much for replying my question about gluten and diet. They are very helpful for me!  My hands skin had cracks since I came to this country. Hundreds cracks made me very painful but I didn't find the reason until last year. A doctor told me that she though it probably caused from gluten. Once I removed gluten from my diet, my hand skin completely recovered. I'm still doing gluten free diet for myself now. For my son, he had a lot of rashes when I gave him oat cereal at four months old. My pediatrics gave him antibiotics but didn't helpful. His rashes disappeared after I switched to rice cereal. I also noticed that my son would be more distractive and response slower if I give him food with gluten.
