Guest guest Posted July 18, 2010 Report Share Posted July 18, 2010 Xiao I saw your earlier off list email on this subject but I am traveling and did not have time to reply. The reason you do not use marketed gluten free products is the allergies you are fighting are to a whole series of grain based proteins and manufactures will substitute equally reactive ingredients or even more reactive ingredients for wheat flour. Things like artichoke flour or spelt flour have similar. We use corn meal or white rice flour very infrequently but not all kids can tollerate them. You and your son need to bite the bullet and just stay away from baked goods as much as possible. Very infrequent usage of processed white bread can be used but still have a mindset to avoid all of it if possible. It really is not hard once you transition. These kids like repetitive schedules and once he accepts meats and veggies in the morning that will be what he expects and he will embrace it. If you have them with him he will make this his " Normal " diet in the mornings. Veggies and potato based snacks will get you by.
