Plus, it's a good home-made 'fastfood' and tastes great. It could also tolerate some tinkering and substituions.Once in a while, it's fun to share something that's not primarily a remedy or detox, you know?Be well,LénaQuinoa saladIngredients:1tsp. veg oil1 onion, chopped3 cloves garlic, peeled, chopped3/4 C uncooked quinoa1 1/2C veg. broth1tsp cumin1/4 tsp. cayennesalt & pepper to taste1C frozen corn kernals2 15oz cans black beans1/2 C chopped fresh cilantroChopped fresh red pepper is nice, too. You could also toss in froz. petit peas, for color ans sweetness.Directions:1. Heat oil in med. saucepan over med. heat. Stir in onion, garlic and sauté 'til lightly browned.2. Mix quinoa into saucepan, cover with veg. broth., season (cumin, cayenne, s & p), Bring to boil, cover, reduce heat, simmer 20 min.3. Stir corn into saucepan, simmer about 5min., 'til heated through.
