For lunch she usually eats a medallion of creamy goat cheese (it comes in individual packets from Trader Joes), 2 pc. turkey bacon, and either an apple or banana. Sometimes she will have a sandwich instead of the turkey bacon and sometimes she will take a little peanut butter to dip her apples in. Dinner is usually chicken, steak, burger with a bun or potato pancakes as the bun (it sounds crazy but it's good) or salmon. Twice a week at most we have white rice, once or twice a week we have potato pancakes. That's pretty much it. For snacks she will eat bananas, carrots and dairy free ranch, potato chips. She eats choc. ice cream made with goat milk a few times a week. She drinks water all day. I hope this helps! It's a pretty boring diet but she's happy so I'm happy! The recipe (I use this term loosely since I really don't measure) I use for ranch is about 1 cup of soy milk (we use unsweetened), add about 1 TBSP lemon juice, salt, garlic powder, onion powder (I prob. use about 1 tsp each, maybe a bit more of the onion), parsley (about 1 TBSP) and whisk it all up. Add about 2 cups of mayo (we use Spectrum) and whisk. That's it! For the potato pancakes, put 2 med. potatoes (I don't peel) and one onion in food processor with the grind insert. Add one egg, about 2 TBSP potato starch and pulse until all the big pieces are gone. Heat oil and fry them up. I usually make them about 1 heaping TBSP size so they cook faster. I don't add salt but I like them better with salt. Guest guest Posted February 28, 2011 Report Share Posted February 28, 2011 potato pancakes/crepes (not really a recipe, I kind of eye ball it) I use 2 eggs a T. of potato flour a T of potato starch a T of Garbanzo/fava bean flour a little sugar or over ripe bananas squashed up (pear sauce might be good too) beat and then add water until it looks like cake batter consistency (pretty runny) then I just cook them like pancakes I suppose you can use any flours that you can have on your particular diet, or even use cooked squash/sweet potato, etc (you might need a food processor to really blend some things) if its the right consistency and tastes good, they'll probably cook up like crepes or pancakes if you add a little baking soda (I think...
