Easy Meatloaf Dr Goldberg Style or how to adapt the diet

Okay, I decided to just put down the meatloaf recipe I use. Yes, it does

contain nondairy creamer. It is a variation on the Twin Meat loaf recipe

from the Better Home and Garden Cookbook that was my bible when I was first

married and didn’t yet know how to cook. It truly is easy to adapt most

recipes to the diet even if you hate to cook.

Don’t let the diet throw you. Instead of thinking what the hell do I feed

this kid, take a normal recipe and change it so it works.

So here it is: Marcia’s Easy Meatloaf Recipe Dr. Goldberg Style:

I dump the following ingredients in the blender and mix them up until

everything is blended together into one big mishmash.

4 slices white bread

2/3 cup non dairy creamer

2 eggs

1/4 cup or a hunk of onion

1 tablespoon Worcestershire sauce

1 ½ teaspoon salt

1/8 teaspoon pepper

Next add this mixture to about 1 ½ pounds ground beef. I cook almost

everything at 350 whether it needs it or not. This usually takes 45 minutes

to an hour. Yummy for dinner and the next day for sandwiches on the

cheapest white bread you can find without dairy

Another easy favorite is what we refer to as Bag Chicken

Buy the Mc Cormick Bag and Season spice packet at your local grocery in the

spices section. Rub the chicken in the spices and add at least a cup of

water to the chicken in the bag. More if you want more gravy. Allow about

eight inches so bag can expand during cooking. I don’t put slits in the bag

like they suggest I just place it in the bag with the tie not all the way

tight. Put it in a 13 x 9 cooking dish and bake at the only temperature we

know 350 for about an hour or so. Whenever it is done. Great with baked

potatoes or baked yams in the microwave. Easy Peasy. This diet doesn’t

have to be as hard as I first made it in the beginning of this journey. Use

the leftovers to make what we refer to as Jewish tortillas the next day.

Jewish Tortillas

(That is what they are called in our house when I’m cooking house. When

is cooking it is Catholic tortillas. In your house they may be Mormon

or Lutheran tortillas)

Put legal cheese shredded on a flour tortilla, Some pieces of leftover bag

chicken (Costco chicken, leftover meatloaf, deli ham or whatever you have)

going down the middle of the tortilla. Place in microwave and cook until

the cheese is melted and hot. Next add what you usually like on Tacos like

tomatoes, lettuce, rice, beans or whatever. Fold each side towards the

middle and put a toothpick in it to hold it together. Have plenty of

napkins if you put a lot of ingredients on it. They can be messy but so

good!!! For some reason in our house Jewish Tortillas are always served

with an apple. Yes, we are quirky. Where do you think got it from?
