Hi nne,

My 5-year-old son started seeing Dr. G in December -- so glad to hear that yours

will be seeing him too! Oddly, I spoke with Dr. G this week about nuggets and he

told me that he preferred not coating them with rice flour or rice cereal. FYI,

I make my own at home and he said that my recipe was perfectly okay. Just so you

know, it sounds disgusting ;) but it tastes great and my son loves them. Here it

is:

GFCF and Corn-Free Chicken Nuggets

Olive oil spray

Chicken breasts

Pork Rinds (yep, pork rinds)

Cut chicken breasts into fairly thin, nugget-sized pieces. Use a food processor

to grind up pork rinds. Generously coat a cookie sheet with olive oil spray.

Preheat oven to 450 degrees. Thoroughly coat chicken pieces in pork rind mixture

and place in single layer on cookie sheet. Cook for about 10 minutes, then turn

over nuggets and cook for 10-15 minutes, or until golden brown.

After the nuggets cool, they can be frozen in individual ziploc bags for later

use. Usually, I thaw them out, then put them in the toaster oven to crisp them

up a bit.

2 questions: What kind of pork rinds? I mean a specific brand? And how

well does the coating stick to the chicken. Thank you for posting this! Argie

Hi Argie,

Any plain pork rinds should do (if you look at the list of ingredients, it

should only have pork rinds/skins and perhaps salt listed). Since chicken is

pretty moist, the ground-up pork rinds tend to stick to the nuggets pretty well.

If you aren't getting enough coating, you could coat the nuggets in a little bit

should only have pork rinds/skins and perhaps salt listed). Since chicken is

What about palm oil? Can this be used?

No, palm or coconut oil is a tropical nut. It's too bad it's good for baking

Hey thanks! Do you coat the chicken in anything to get the pork rinds to stick?

And what did Dr. G say about ketchup? does your son use ketchup when eating the

nuggets?

Hi ,

I don't need anything to make the crushed pork rinds stick usually, but if you

aren't getting enough coating, feel free to use some olive oil spray to help

things stick. doesn't use ketchup for dipping, so I'm not entirely sure

if Dr. G is okay with it -- most ketchup has a TON of sugar, but Heinz has a

reduce sugar version that has almost none (my husband and I use it because we're

low-carb people). My guess is that the reduced sugar ketchup would be fine in

moderation... -- Holly

Thanks Holly! And I just want to say that I am trying this nugget recipe today

and will let you know how it goes :) Also, I get boars head roast beef cut at

the deli and instead of cutiing it thin I cut it thick in about 1/4 slices and

then saute it with some olive oil and its really good and my son loves it! and

we all have it for dinner- takes about 2 minutes on the stove. Also I took the

tops of the broccoli- i buy them that way already- and put those in and saute as

well with some sea salt and he - who never eats veggies ate it that way- did the

same with thinly sliced organic potatoes with olive oil in the oven at 425 and

it was really good - so I am like yea!!! 3 things my son and daughter will both

eat and both liked as did the parents! its all healthy and dr.g diet approved

and took like 5 minutes to cook!!! woo hoo!
