Guest guest Posted April 4, 2011 Report Share Posted April 4, 2011 I make a really yummy coconut flour muffin for my son and he loves it 1/4 cup coconut flour mixed with 1/4 tsp baking soda, 1/4 tsp salt and cinnamon. Add to wet ingredients which are 3 eggs, 1/4 cup honey and 1/4 cup oil. I also add 1 large shredded zucchini or 1 cup butternut squash puree or shredded carrot. Mix all together and put in 12 nonstick muffin liners and bake at 350 for 25-40 minutes--they will be nice and brown on top when done. Hope that helps--you can even add different fruits like blueberries if you want. MOM'S FAVORITE RECIPES... Anybody? I started the diet after 1 1/2 years in GFCF diet. I was relieved that rice, potatoes and white bread (and some corn) were allowed. HOWEVER, we saw a negative reaction on wheat and (believe or not) rice (including the ceral). My husband swears that corn flakes did the same... so all 3 are out of the map. This leaves me with only potatoes. My son has been doing OK with lunch & dinner (meat & veggie for the most part)... but breakfast? I'm running out of eggs & bacon (I try to add ham or onions to the eggs for a change, but... eggs every day?)... Cereal and bread are out of the question; it seems as if he reacts with any starchy food... Anyways, I have found some good recipes in the Specific Carbohydrate diet (PECANBREAD.COM) that do not contain dairy or nuts. Did not find but one recipe for breakfast. Point is.... We as mothers have found ourselves cooking unimaginable recipes that either we have created ourselves or have heard from one another. I can't believe that this group doesn't have a database with recipes submitted by moms (or dads)... This I think would be priceless information from the pioneers of the generation to all moms that just joined or will in the future... Please, help me... I don't know if the fact that his menu is becoming smaller and smaller just makes me so crazy I can't even be creative about his meals.... THX!!! Its possible its not the rice making him react but the malt barley thats in it (source of gluten) My daughter doesn't tolerate any gluten and no goats products either, she is just too sensitive. But we are okay with Rice and Potato also. I make homemade pancakes (those are hard to mess up) and sausage for breakfast. The nice thing about pancakes is you can freeze a bunch of them ahead of time and microwave them when you need them. For the longest time I was in the GFCF diet, everything was rice: rice chips, rice milk, rice pasta, white rice, brown rice, rice cereal, you name it. i started noticing that he would get hyper and very " autistic " after meals, and i couldn't figure out why (I was doing everything right... right?), and several hours later (around the time for the next meal) he seemed calmer. I told my husband " it's as if the food makes him hyper! " I confirmed that rice was one of the causes one day that we had to run errands and we ended up in a restaurant... he was so tired I had to start singing songs to keep him awake. Then he ate some steak & rice, and some grilled onions.. that's it. Then I though " this boy is going to sleep as soon as I put him in the car seat " . After the restaurant I drove home almost 1 hr and he was jabbing the whole trip back, and didn't even yawn. So... I should say, Thank GOD I found out rice was a big problem. We immediately started noticing his eye contact was better as soon as we removed the rice and kept him on veggies & meat, non-tropical fruits, water and/or watered juice. he still have dark circles under his eyes, but at this point I can't even guess what this could be caused by. So.. yeah... rice cereal caused the same reaction. we have not met with Dr. G yet, and wont see him until july 12th. Remember, carbs, like muffins, are a real treat and therefore used very sparingly, as the diet should consist mostly of protein and veggies and only 2 fruit servings per day avoiding berries, tropical fruits and for many citrus as well. Sorry to be the barer of bad news. The muffins do sound delicious, but not for a kid. Due to her limited diet with carbs, there is no way to fill her otherwise. Does anyone else have this problem? I do worry about how much protein she eats and the impact it could have on her health. Guest guest Posted April 6, 2011 Report Share Posted April 6, 2011 We used to make Jelly eggs (low sugar grape jelly on an egg " pancake " ) or you could make crepe like pancakes with eggs, a little bit of potato starch, potato flour, and then add water or soy/goat milk until it is the consistency of pancake mix... you could add a little fake sugar, or ripe bananas, cook like crepe/pancake... and we use sugar free syrup, or you could use peter pan peanut butter if it's tolerated. It's not great, but it would at least break up the meat and eggs a little bit. Dr. G seems to think sugar substitutes are better than getting too much sugar.
