I roast large meats such as a whole chicken or a lean pork roast. I also do crockpot dishes. My favorite is beef curry with tons of veggies. The veggies I generally do in some sort of saute, so I can add lots of garlic and/or ginger. If I'm short on time, I steam the veggies and eat with butter and lemon. For me, the trick is to combine several types of vegetables at one time, and use a lot of seasonings. And I like cold, marinated chopped veggie salads. For example, sauted zucchini combined with raw chopped celery, onions, and anything else, with olive oil and lemon juice. Once you have a marinated salad and leftover meat in the fridge, all you have to do is slice some meat, add to the salad, and you have a no-cook meal. Some greens even taste good cold and leftover, such as spinich with a bit of lemon juice. The rest you can just reheat. If you go to the socialwandr and do a search on "recipe" it will bring up all the ideas we've talked about lately. posted a bunch of very good, very easy recipes.
