Hi KrassiApples yield the maximum pectin when you mash them slightly w a fork (unpeeled) and you let them sit on a platter for 30-40 mins. Then eat just like that or add a little little honey if your child gets picky because it will look BROWN. The brownish coloration is the result of the enzymes and pectin interacting w the oxygen. Let me tell you, just for your peace of mind, that l gave my son 300 mg of flurbiprofen a day for a 5 month time span and nothing happened to him, he was calmed and gained back the affectionate child he was before regressing and he has kept this gains. I checked his liver before starting the drug and every 4-6 weeks while he was on it. My kiddo is 6yo, so dear Fransel, put your hands over all of your son's medicines, pray for God to annoint them with the Holy Spirit, the spirit of health and..... Don't be afraid. I will brown ours too. We also use apple pectin as binder for die offs but on hold right now.
