You wouldnt see any changes unless he was 100% gf for at least 4-5 months and then didnt have even slightest reaction to slice of pizza. Even slight decrease in concentration. There is disagreement on which are true. 1. Celiac is really just an infection. 2. Some people develop celiac later in life, not born with it. 3. Gluten is in higher amounts in the foods nowadays, so the amount is too much in the typical diet. 4. Gluten is suppose to be digested in the intestines, but when they are not working correctly, it crosses the intestines into the blood into the brain where it pretends it's a neurotransmitter, which it's not, so this is why some act " out-of-it " on gluten. 5. Gluten is a toxin which normal people can handle, and ill people can't since they can't handle toxins in general. 6. Celiac has been linked to all kinds of things, such as genetics, infections, auto-immune, allergies, and immune stressors in general. 7. Children with autism usually have blunted vili due to any of numerous reasons I already mentioned. You many not see a change upon eating gluten if you eat gluten regularly, if you have too many other things causing current symptoms, if you are on a probiotic that digests gluten, or if you have little exposure to gluten - some have to eat it regularly before symptoms appear. Yes, gluten is a difficult thing to figure out. I just gave up on it, not buying it anymore, since I learned too many bad things about it. Currently, if we eat gluten, we get symptoms right away. But in the past, those symptoms were not noticed when we ate it regularly. But symptoms did go away when we stopped eating it. All of us tested allergic to gluten, wheat, dairy, and peanuts.
