I use them in a slice of ham rolled up with cream cheese....or right out of the jar. Dill pickles too (not the sweet ones), and cucumbers and celery dipped in quacamole. With all the various medical problems I have, eating carbs is probally the best. I don't pig out on them, but I don't low carb either. My last HBA1C was 6.1, which my doctor and I were pleased with. I don't want the A1C of 7.0 (which they say is excellent control). I'll settle for a 6.5 or lower. Then pack away! A slice or so of cheese...some sliced deli roast beef...some olives...some " piggy puffs " ...maybe a pickle... Or maybe a can of water packed sardines ( remember to bring a fork!) or a can of tuna (bring the can opener...you get the idea. Even a half cup of cottage cheese would probably be okay. I wrap up roll ups and things like that - guacamole in a jar, cream cheese in its container. Where I live it's quite hot in the summer, and I do photo shoots or go to horse shows (all day stuff) quite a bit. Couldn't live without a cooler. You put it in your insulated cooler and it stays frozen solid for hours. And keeps everything in there cold. Available at Walgreens etc. and some markets...costs about $3 each. They are a legume (like beans), and have more carbs than the " real " nuts such as the others you mentioned. Some of us can eat them, but as you know, eat, test, eat, test, eat test!!! lol. No problem with roasting. Re- " label reading " . Pay no attention to the " % " on the label. That only relates how a serving compares to a day's calories (usually 2000cal/da). What you need is the " grams of carbs per serving " & " serving size " . These are the things you need to know to control your carb intake.
