CRUNCHY GREEN SALAD

PUMPKIN SEEDS – TOASTED

BROCOLLI

MANGETOUT

FINE GREEN BEANS

ONIONS

FENNEL – can be eaten raw or use artichokes

(If you want to cook the fennel slice it finely, steam for 10 mins then fry

gently with your onions in the recipe)

Or

Fry the onions in a little olive oil.

Cook broccoli, mange tout and beans so they're al dente

I am useless with fennel - it always goes wrong for me, but the salad works

without it, although it's a fabulous ingredient if you can get it right!

This dish was at a client's party one time, so I rushed to car, wrote down

ingredients and made it at home. She didn't know the recipe cos she buys it

from a local deli and they won't give away the secret!
