Guest guest Posted July 24, 2012 Report Share Posted July 24, 2012 CARROT AND SWEET BASIL SOUP - I think I made this one up! Sweet basil tastes very different to the normal basil. Is delish! Again, do things to taste. I rarely follow recipes ... 1lb of carrots, cubed or thinly sliced About 10 little red shallots, chopped Handful of sweet basil, chopped small 1 pint of vegetable stock Add a dash of oil to the soup pan and fry the shallots gently, to light brown. As they're turning in colour, add the carrots. Add 1 pint of vegetable stock, stir in the sweet basil and cook till carrots soft. Pop into the blender and voila! You're done.
