Guest guest Posted August 29, 2001 Report Share Posted August 29, 2001 Hi Madge- I can't tolerate 2 slices of bread either! A half a cup of rice jumps me very high. I have found I can eat 1/2 of a very small sweet potato. If I eat bread it is pepperidge farm " Lifeworks Family Wheat " It is 12 carbs for one slice (the slices are big) and I can only have one slice. If I want to make a grilled cheese or other type of " sandwich " I use the pepperidge farm thin slice bread which is under 8 carbs per slice depending on whether you choose wheat or white. The wheat has more fiber so less carbs. These breads have made my diet more bearable and allow me to eat more like a normal person. I am just careful not to go over about 12- 15 carbs in a single meal with this " type " of carb. Other carbs (like ones in veggies) don't seem to affect me hardly at all. Yesterday I was at 103 bs and ate a steak, sliced home grown tomatoes with caesar dressing, and creamed spinach (homemade not frozen- made from spinach, heavy whipping cream and a bit of butter). At two hrs I was 112. I didn't test for my peak because the meal had no bread/potato etc in it. Later in the day I was not so " good " (smile). I made my typical grilled cheese on thin sliced bread which is usually a safe deal for me (maybe a 30 point jump) but I had some potato chips (bad idea)! I went from 113 to 158 at the 1 1/2 hr mark (my peak). That is a jump of 45 points which put me higher then I wanted to be. So I have learned to spread my carbs out a bit, eat smaller amounts of the starchy carbs in one meal plan, wait till I am low to treat myself to a bit of ice cream etc. I test before I eat and then decide if I can have that bread or not. If I am " low " (like two morning ago- 93) then I'll have my two slices of thin bread with my eggs and bacon for breakfast. That morning my breakfast only jumped me from 93 to my peak -at 1 1/2 hrs- of 123. That is a 30 point jump which I think is ok and I had a very satisfying breakfast. Just some ideas- hope they help. Which for me is really good! I didnt check after breakfast but lunch was the london broil and salsa and apple sauce. I stayed low at 112. When I got home I checked and I was 85 at 6. For dinner I also had a cheese sand. with a little mayo and tomato on two pcs. of very thin wheat and a small pce of mellon, 2 hrs later I was 161. It could have been the bread, or the mellon, but the other night I ate a half a honeydew with hardly any rise, go figure!!! But I didn't exercise either so that didn't help. I find that having more meat at lunch keeps me low. Don't know what I am having tomorrow since the meat is all gone now I forgot to make anything extra. I'll see. Haven't been going to the store for lunch at all. If I do, I get a salad and sometimes a little chicken salad, no rolls anymore either. No rice for me but will have a little bit if I go to the chinese rest. A spoon full is all I will take. I don't take a reading when I go though, I am scared to!!!! the regular soy milk is 5 carbs in 8 oz. I had the plain tonight as a snack.
