I didn't eat all of the chicken salad I brought and I think my Atkins Rolls are probably smaller. I use 4 eggs for a recipe and use the " spread out on a cookie sheet and cut into squares " method. I end up with 12 slices. I also do not use the cream of tartar. I didn't need the pork rinds and cream cheese snack in the morning. Wasn't hungry. (I eat lunch at 11:30am) I did eat the 1 cup of salad with dressing. I didn't get very much dressing though! It was stuck in the bottle and I got mad so I just put it back in the fridge (work fridge). I had about 2 teaspoons. I bought some pork chops this morning and am looking forward to those for dinner. Guest guest Posted October 30, 2000 Report Share Posted October 30, 2000 I am doing good so far, , I just know me and a week is pushing it the way I have been going lately. But this is day 2 and other than a few substitutions that I believe are allowable I am 100% on induction/turtle training. Since I rubberized my chicken for chicken salad last night, I just did the usual lunch out with my sister. I did very well though. We went to the buffet at Happy Joes and fortunately, they can be fairly LC friendly for such a high carb place. I had taco salad with the appropriate amounts of meat and lettuce, a little cheese and a little tomato (not much). I also had 4 radishes and 2 3-inch celery pieces. Oh, and just a little broccoli and cauliflower with cheese sauce on it. I tried to avoid the sauce as much as possible because it probably was processed. All in all, I think I did okay. Then, we still had a little time left and didn't want to go and eat more, so we stopped by Mom's to drop off some papers. Am I cursed or what? She had just finished making chocolate chip cookies. What is the deal with those any way? Of course she offered us some and of course I turned her down for both of us. LOL She was making a surprise goody box of home-baked treats for one of our freshmen from Texas. My folks winter about 10 miles from his hometown and Mom met his mother when she came to visit Central this summer. I am just destined to be put through trials and tribulations this week.
