Lynda,

I wonder if you would have the same reaction if you used raw milk? The good bacteria take over all the other bacteria, so you may not have a drastic reaction to it. I guess some people just cannot tolerate dairy products in any form though. How about a different fermented food? Have you tried raw sauerkraut? That also contains all the beneficial bacteria.

My blood sugar just keeps rising, I just had it checked. I am usually

in the 90's which is high now I am 102. I am losing weight though, I

was also concerned that I had a lack of oxygen in the bllod my co2

was very low. I am going to try the Kefir!!!

I have to drink Lactaid instead of milk all of a sudden, even my 9

year old can't tolerate milk, she was breast fed with implants by the

way. I want to try the Kefir but does it cause the same problems as

milk for those who have problems?

Vinegar has been a problem for me for many years,

and sauerkraut is one of the things I have hated since childhood.

Any other products?

I cannot eat soy.

Peppers are one of my worst allergens.

I hate that I cannot eat some of this stuff.

Lynda,

You can make other kinds of kefir, with other milks. I am quite certain you can use almond or rice milk. You might want to check some of the kefir groups or Dom's kefir site to see if there are any special instructions for making kefir with other milks.

Raw sauerkraut has no vinegar in it, nor do cultured fermented vegetables, so you shouldn't have any trouble with them.

You can also try making coconut water kefir. Here's a great link on it:

The Body Ecology site by Donna Gates is a great one for healthy eating ideas. She highly recommends fermented foods in a healthy diet.

I just checked another site about kefir's alcohol content, and this is what it says:

Depending on the fermentation process, fermentation temperature, time and type of culture used, the alcohol content of Kefir will vary from 0.06 % (Marshall 1984), up to a maximum of 3% alcohol. The average alcohol content in home brewing is around 0.5% with a loose lid and 1% in an airtight jar. Shaking the fermentation container during the fermentation time also results in higher alcohol content.

So sorry, Lynda! How do you do with other fermented products? I wonder if there is a way you can overcome your allergy?

Lactaid does not help, it is the cassein that gets me, not the lactose, I guess

Patty,

This site talks about the alcohol content of kefir. I am allergic to

alcohol. Maybe that is the problem with me drinking kefir????

Cottage cheese gives me some trouble.

I avoid most fermented foods.
