And it's a fairly low carb potato alternative. And, it is delicious! Terry *********** Jicama Home Fries 1 medium sized jicama (approximately 5 " in diameter and 3.5 " in height) Lawrey's Seasoned Salt to taste 1/4 cup olive oil 1/4 cup butter Carefully peel the jicama and cut into 1/2 " dice. Melt the butter into the olive oil in a skillet and fry the jicama pieces in the oil and butter mixture over a medium low heat until all the pieces are uniformly browned. Season to your personal taste using Lawrey's Seasoned Salt. The jicama has a slightly crunchy texture, and a slightly sweet taste. This is a great low carb veggie side dish.
