I started drinking Kefir this past week . . . Talk about something that's easy to make, and tasty! Wow! . . . I put about a half teaspoon of honey in 12 ounces of Kefir for just a bit of sweetness. . . My only problem is that I could drink every last drop - every day! My hubby thinks it's gross - he's never tasted it! He just sees the grains growing on top the milk! . . .Funny - because, if he would taste it, there would be none left for me! Rogene

Lynda,

That certainly is a concern. What I've seen suggested is to either

freeze them or dehydrate them, or else let them go dormant in milk in

the fridge.

There's instructions on the net about the above methods.

I've wondered the same thing. But since I haven't crossed that bridge

yet, I didn't worry about it. I gave away so many grains that I only

have about a teaspoon of my own left, so I'll be trying to build up my

new supply. When you are ready, let me know and I will send you

some. Maybe when you get back from Hawaii?

Of course, you can always drink it for awhile and when you're tired of

it, finish off what you have, grains and all, and then just get some

more from a friend who has some to share when you want to start up

with them again. It's nice when you have lots of friends into kefir--

somebody is bound to have extra grains!

The paper that Patty sent describes how to towel dry the grains . . . cover them with dry milk before storing them in the refrigerator for extended periods. She also has recipes for cheeses that look good. Mine are growin like crazy - but I don't have any extra yet . . .I want to get my kids started while they're here for the holiday. I want to try them, and so does my sister. She is diabetic and I am

trying to get her off the junk she eats. She seems to think that

Terri,

No, probably not. My sister wants to go to Kauai. I am not sure, as

my third sister may be there also, and so we may never leave the big island.

I came to Honolulu many years ago to do a meeting. The group leader

lived in Kaneohe (sp??) Nadine Onodera. There was a pretty good

organization there once.

Thank you, you just answered a question I had, the curds are the grains.........I didnt know that yet, I have only read one site on it so far. How much do you drink a day? I am drinking about 2/3 cup in the am and one at night. Should I drink it more often? I think I would have plenty of curds in mine, it seems lumpy til I stir it. I would be happy to send her some. Should I strain it? How did you prepare what you sent me? I sure appreciate it ! ! Right now mine is pretty sharp, but it is no problem getting it down. Should I refrig it? That wont kill it will it? just slow it down? I dont want to do anything that might hurt my kifer.........

Dede,You can strain out some curds to start a new batch, Or you can do what I do - use all but a small amount of curds AND whey. I put that in a new jar, add milk then start the process all over. As to the whey, You can drink the whey if you want to - or throw it away, unless you want to use it for something else . .. I think Patty said she soaks stone-cut oatmeal in the whey. I end up drinking most of the whey when I stir it together with the curds. . . It's only when it gets ahead of me that I'll throw away the whey and save the curds for future use.It's all consumable . . . and very forgiving . . . It depends on how you want to consume it. . . I am still somewhat confused, mine is healthy too and growing alot. Do I strain the kefer, and put the curds in a new jar and put new milk in it? Yes, there is...depending on how the person took care of the grains, what kind of milk was used, how often they were changed, how they were shipped, etc. My grains were definitely healthy! Hi D, Here's what I do with my kefir: I have one jar on the counter--this is my currently fermenting kefir. I change the milk every morning after a 24 hour ferment, straining out the grains and putting them back into the jar with fresh milk. I have another jar in the refridgerator. This is my already finished kefir that I got from the counter jar. After I strain out my kefir grains, I pour the fnished kefir into my refrigerator jar to let the kefir get cold. I might not drink it until the next day. I like to drink mine very cold. This also allows the kefir to "ripen" and develop even more nutrients. Specifically, folic acid will increase as kefir ripens. It will get more sour as it ripens, but it will actually be healthier for you. You will need to actually change your milk daily instead of just adding in more milk. I suppose

the way you are doing it will work for you though....I haven't heard of anyone doing it that way, but it sounds okay! Just don't keep the grains in the refrigerator too long...cold temperatures slow down the fermentation process and can actually change the balance of the kefir flora. Good luck and enjoy the kefir! Dom's site is wonderful....he does all kinds of things with his kefir, experiments and new recipes and whatever. This page was just for cheese making...I have not graduated into that complexity yet, and most likely won't. I have enough to do with just my kefir! His website is comprehensive. Anything and everything you want to know about kefir, Dom has it. You may want to go to the basics and start there. I'm feeling great . . . I go for a preliminary appointment for cataract surgery in a couple hours . . . I've been assured that, even if I am sensitive to silicone, these are very, very safe.
