I went through the same dilemma with our Thanksgiving last month. I tried to make the stuffing with the low carb bread and it just didn't work :-( But I did make a low carb pumpkin pie and everyone loved it!!! It was crustless and nobody missed the crust at all - so why don't you try keeping the pumpkin pie low in carbs to help you?? Here's the recipe I made and have made it since - my pumpkin pie expert couldn't get enough of it :-) * Exported from MasterCook * Pumpkin Pie - Low Carb Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : *Atkins Diet Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Cups Canned Pumpkin 1/2 Cup Splenda 1 Tablespoon Brown Sugar Twin 2 Each Eggs 1 Cup Whipping Cream - Northumberland 1 Teaspoon Vanilla Extract 4 Teaspoons Pumpkin Pie Spice Mix all well. Spray pie plate with pam and add mixture. Bake at 365 for 40 - 45 minutes.
