Guest guest Posted November 20, 2000 Report Share Posted November 20, 2000 Low Carb Hot Cocoa 2 heaping Tbs. milk & egg protein powder (3 g carbs) 1 heaping tsp. unsweetened cocoa powder (1.5 g carbs) 1/2 tsp. instant decaf coffee 3/4 boiling water 1 Tbs. cream (trace carbs) 1 packet non-sugar sweetener (trace carbs) Whir all ingredients except the sweetener together in a blender or food processor until well mixed. (The protein powder dissolves so badly that mixing by hand doesn't work very well.) If the cocoa's gotten chilly, microwave it for a few seconds to hot it up again. All they are is dolled up protein powder, and it's the " dolling up " that adds the carbs. Just Whites powdered egg whites is pure protein, carb free, and fat-free because it is 100% protein. It also has NO taste, is cheap, is in most grocery stores next to the cocoa and baking stuff, and it is a good solution for those who can't have dairy(whey) or soy. Besides making shakes, it is also good for baking and for dusting chicken and other meats for frying. To make a shake you need about 8 oz of liquid to 1/4 cup of Just Whites. Everything else is for flavoring and texture. Some of us need some fat to get going, so the cream or cream cheese will help with that component if you need it. Liquids: water + Davinci syrup or extracts diet soda in your favorite flavor Sweetener (use if you don't use diet soda or a syrup): 1 pkt favorite sweetener (1 carb per packet), I use 2 Splenda tabs instead If you add cocoa or coffee crystals it will take a lot more sweetener. Thickeners: 2 Tbsp heavy cream ( .8 carbs) 1 oz cream cheese (mixes up well in blender only, 1 carb) 1/4 cup SF vanilla yogurt (3.5 carbs Krogers, brands vary) crushed ice psyllium seed husks (don't count because it is all fiber) The Just Whites will foam up really nice with a diet soda and a little cream. (The non-dairy people will have to go with ice or psyllium). I particularly like the yogurt because it adds an ice cream flavor to the whole thing. Also the flavored carbonated waters at Wal-Mart are good for variations in flavors as you get bored with things. Tropical fruit, peach melba, blackberry apple, and other interesting ones keep it varied. My most favorite 2 recipes so far are these: 1 12-oz can Canfield's Diet Cherry Chocolate Fudge soda (has aspartame) 1/4 cup Just Whites 2 Tbsp cream (.8 carbs) 1/4 cup SF vanilla yogurt (3.5 carbs) 8 oz Diet Rite Tangerine soda (Splenda, no aspartame) 1/4 cup Just Whites 2 Tbsp cream (.8 carbs) 1/4 cup SF vanilla yogurt (3.5 carbs) If you are taking to work, you can get one of those " shaker cups " at places like the Dollar Tree. A canned diet soda and a sandwich bag for the Just Whites pack well, just shake up in the cup when needed. You can add the psyllium to make it thicker if you like. Cook until top is dry. Remove and cool. Lunch: You could make double this recipe and use leftovers as wraps for diced meat, grated cheese and shredded lettuce. Rollup with your choice of yummies inside, and heat under grill until cheese melts. Yummy! (*They actually have a restaurant here in GA that does this .. costs $5 per rollup, but they are wonderful!*) Dessert: Triple the recipe and fill with whipped cream, flavored with strawberry or other SF syrup of your choice. Add nuts and / or berries. Roll up and enjoy! Pancakes 3 eggs 1/3 cup protein powder 1/2 cup water 2 TB Vital Wheat Gluten 1 tsp. vanilla 1 TB oil 10 drops liquid sodium saccharine or stevia to taste 1 tsp. baking powder For really fluffy pancakes, beat whites till stiff, mix other ingredients separately, then fold in. YOU WANT A TEXTURE THAT IS COMPARABLE TO COOKIE BATTER (YOU *DO* REMEMBER WHAT THAT'S LIKE, DON'T YOU?!?!?) IF YOU NEED MORE WATER TO GET THAT TEXTURE, ADD MORE... DEPENDS ON HOW DENSE THE PROTEIN POWDER IS. FOR A MALL IN YOUR HAND THE SIZE OF A LARGE EGG AND FLATTEN IT SLIGHTLY. FRY IN HOT OIL UNTIL DARK GOLDEN BROWN. DRAIN ON PAPER TOWELS. WHEN COOLED SLIGHTLY, PUT IN A LARGE PLASTIC BAGGIE WITH 1/2 TSP CINNAMON AND 3 PACKETS OF SWEETENER. SHAKE TO DUST THE DONUTS. THESE ARE BEST WHEN STILL WARM BUT STILL VERY GOOD WHEN COLD. SHOULD YIELD ABOUT A DOZEN, DEPENDING ON SIZE.
